A fluffy, moist coffee cake is flavored with fall spices and apples. The apple butter coffee cake is topped with a crumble and garnished with a dusting of powdered sugar. 

You know what I love about coffee cake? It’s a cake that defies the “dessert” label. Breakfast. Brunch. The perfect afternoon snack. Sip a cup of steamy coffee and dig in whenever you want.

Apple butter coffee cake is perfect for the fall and holiday season. It’s easy, mixes together in one bowl, and bakes in one pan. A simple pleasure for when the rest of life is feeling a bit hectic.

For the coffee cake:

  • 1 stick (8 tablespoons) butter, melted
  • 1 cup apple butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

 

For the streusel topping:

  • 1/2 stick (4 tablespoons) butter, melted
  • 1/2 cup sugar
  • 3/4 cup flour
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon

Instructions

For the coffee cake:

  1. Preheat your oven to 350 degrees. In a large bowl, whisk together the melted butter, apple butter, eggs, vanilla and sugar until smooth. Use a rubber spatula to mix in the flour, baking soda, salt and cinnamon until combined and a batter has formed.
  2. Grease an angel food cake pan or a tube pan and evenly dollop the batter into the prepared pan.

For the streusel topping:

  1. In a small bowl, combine the melted butter, sugar, flour, vanilla and cinnamon until a crumbly streusel forms. Evenly top the prepared coffee cake batter with the streusel topping.
  2. Bake for about 40-42 minutes, or until a toothpick inserted into the middle comes out clean. Let cool slightly in the pan before turning the coffee cake out onto a baking sheet, then turning it back over onto a cooling rack so that the top side (streusel side) is up.
  3. Allow to cool slightly before slicing and serving warm. Enjoy!

Notes

  • If making this coffee cake in advance, allow it to cool completely before storing it in an air-tight container or plastic storage bag. I highly recommend warming the slices back up slightly prior to serving.
