How to Stuff the Chicken with Brie Cheese

Stuffing chicken may seem like a daunting task, but it really isn’t! A sharp paring knife is needed to help make the job easier. Follow these simple steps to get the job done:

  1. Place your hand on top of the chicken breast to hold it in place.
  2. Use a sharp paring knife to gently and carefully cut a pocket into the middle of the chicken. Making sure to not go all the way through on all sides – only one “pocket opening” is wanted.
  3. Stuff each prepared pocket with sliced Brie cheese.
  4. Wrap prosciutto around the stuffed chicken breasts to keep it all together!

All Things Orange Glaze

Now, to really take this chicken over the top, an orange glaze! And guess what? It’s SO easy!

Here’s what you’ll need:

I love using orange marmalade and how you can still see the sweet orange peel in the mix. It just adds another level of goodness! 

Pro tip: microwave the orange marmalade for about 30 seconds to make it easier to mix together with the chopped rosemary! Then, it can easily be spread all over the prepared chicken. Easy peasy!

Description

Brie Stuffed Prosciutto Wrapped Orange Chicken may seem like a mouth-full to say, but it is a mouth-full of deliciousness! Chicken breasts are stuffed with creamy Brie cheese, wrapped with salty prosciutto, glazed with an orange marmalade and baked until perfectly golden brown. Slice into the chicken for a creamy, salty, sweet bite.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/2 pound Brie cheese, sliced
  • 3 oz prosciutto (about 2 slices of prosciutto per chicken)
  • 1 cup orange marmalade
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat your oven to 425 degrees. Use a sharp paring knife to gently cut horizontal “pockets” in the middle of each chicken breast. Making sure to not cut all the way through the sides so that you only have one opening to the pocket.
  2. Stuff each chicken breast with 2-3 slices of Brie cheese. Then, wrap each prepared chicken breast with 2 slices of prosciutto to help hold it all together. Make sure the prosciutto covers the opening to the pocket to help keep the cheese inside. Place the prepared chicken breasts in a 9×13 baking dish.
  3. In a small, microwave-safe bowl, microwave the orange marmalade for about 30 seconds. Stir in the chopped rosemary and evenly glaze each chicken breast with the sauce until it is all used. Cover the baking dish with foil.
  4. Bake for 20 minutes covered, then remove the foil. Baste and glaze the chicken breasts with juices and sauce in the bottom of the baking dish. Bake for another 20 minutes, uncovered, or until the inside of the chicken reads 165 degrees.
  5. Turn on the broiler and broil the tops of the chicken for about 3-5 minutes to help get the tops golden brown and caramelized. Enjoy!

Notes

  • Use the prosciutto to help “seal” the pocket of Brie inside the chicken.
  • Broiling the chicken at the end can be skipped if your chicken is good and golden brown and caramelized. I like adding this on also to help crisp the prosciutto if it isn’t already.
  • Serve the chicken with the sauce on the bottom of the pan poured over on top for an extra addition!
