To say that I’m obsessed with this Blackberry Baked Brie appetizer is an understatement! A creamy round of brie is gently wrapped in a buttery pie crust and baked until golden brown. Topped with a warm, blackberry sauce, each bite is gooey, cheesy, buttery and then slightly sweet & tangy from the blackberries! It’s a match made in heaven!

How to Make Baked Brie

First off, this recipe is so much more simple than it sounds or looks! No need to fear here. Take your round of brie cheese and place it smack dab in the middle of a rolled out pie crust round. I just used store-bought for ease, but you could certainly make homemade pie crust if you wanted!

Then, you start to fold and tuck the pie crust over the top of the brie! You want to create a wheel of pie crust around the brie – so make sure you are just gently folding and creasing the pie crust together. If you get a little tear, don’t fret! Just piece and dab the pie crust back together. 

Brush the pie crust-wrapped brie with an egg wash and bake until golden brown and delicious! 

Now, it’s time to get to the blackberries!

 

 

Let’s Talk Blackberry Sauce

One of the things I love about this blackberry sauce, is how much flavor you can achieve with just a few simple ingredients!

This sauce couldn’t get any more simple, either. All you have to do is put the blackberries in a pan with some sugar and fresh thyme and let the heat do it’s thing!

The blackberries will gently start to break down (you can smoosh a few of them to get it started) and a wonderful sauce will start to form! If needed, this sauce could be made a day in advance and re-heated a bit before topping and serving the brie. 

If you ask me, this sauce is a must-have to go along with the baked brie! It just adds the perfect amount of sweetness and slight tang to balance out the rich, buttery-ness of the cheese. Don’t have blackberries on hand? Try it with blueberries!

The Best Way to Serve Blackberry Baked Brie

You’ll want to serve this brie straight from the oven, as you want allllll that melty, gooey, cheesy goodness!

I think the best way to serve this baked brie is with some good crackers or pieces of bread. Just arrange it all on a platter and dig in. But, act quick! Because this will disappear before you know it!

This appetizer blew me out of the water. The brie is just so dang good! Especially when it’s wrapped in a buttery pie crust and topped with a blackberry compote. I could just eat the whole thing!

It’s the perfect appetizer for a game day, holiday, family gathering, date night or just because you need something decadently good to snack on.

To say that I’m obsessed with this Blackberry Baked Brie appetizer is an understatement! A creamy round of brie is gently wrapped in a buttery pie crust and baked until golden brown. Topped with a warm, blackberry sauce, each bite is gooey, cheesy, buttery and then slightly sweet & tangy from the blackberries! It’s a match made in heaven!


Ingredients

Scale
  • 8 oz round of brie cheese
  • 1 pie crust
  • 1 egg
  • 1 tablespoon water
  • 12 oz blackberries
  • 1 teaspoon fresh thyme leaves
  • 1/3 cup sugar

Instructions

  1. Preheat your oven to 400 degrees. Place the brie in the center of the rolled out pie crust. Gently fold and tuck the pie crust over the top of the brie to create a wheel. Making sure that there are no seams where the brie could seep through.
  2. In a small bowl, whisk together the egg and tablespoon of water. Brush the top and sides of the pie crust-wrapped brie with the egg wash. Bake for 25-30 minutes, or until the pie crust is golden brown.
  3. Add the blackberries to a sauce pan with the sugar and thyme over low heat. Gently stir and occasionally smoosh a few of the blackberries to help break them down and create a sauce. Allow the blackberries to simmer for about 10 minutes, or until a sauce has formed. Leave some of the blackberries whole for texture and contrast.
  4. After the brie comes out of the oven, gently move it to the desired serving platter, top with the blackberry compote sauce and serve with your choice of crackers or bread pieces. Enjoy!

Notes

  • I use a store-bought pie crust for ease, but a homemade pie crust can also be used!
  • The blackberry sauce can be made in advance and re-heated a bit before topping and serving.
  • Serve the brie immediately as you want all that warm, gooey, cheesy goodness!
