The Monthly Scoop – January 2021

Welcome to another Monthly Scoop post – January 2021! First off, happy New Year! Isn’t it crazy that it’s 2021? January held so many fun, precious memories to us. From romping in the 15 inches of snow we got with Queso & Amos, to creating comforting recipes to a little life change. We’ve got lots to catch up on!

January Happenings

Here in Nebraska, we got a massive snow storm that brought 15 inches of snow! It was pure bliss to me! I couldn’t resist the idea of running Queso through the snow, so Brooke Confer Photography helped me make that happen! Look at some of the amazingly fun photos she got:

Even though we got a lot of snow in January, we still spent quite a bit of time outside at the farm! 

Another big January happening: John started Paleo! He’s loving it and is feeling really great, but it has also been an adjustment! Especially with all my blog food and recipes that he can’t eat – friends and family are getting stockpiled haha! 🙂 Just swing by with some tupperware and I’ll fill ya up. 

Every Winter, we try to do a couple things. One: watch all the Harry Potter movies (YAS). And two: read a book series together that has been made into movies! Last year we read all the Harry Potter books before we watched the movies, and this year, we are doing the Twilight series! We’ve made it through 2 books and movies so far!

KJ & Company Update

Well, here goes: I’m officially FULL TIME with KJ & Company!! Cue all the confetti. Last January, we started to really pray about where to go with KJ & Company and for God to show us what to do. And boy, oh, boy did He! The opportunities, doors opened and just the continue pull at my heart at this is what is right was so amazing to see play out. A year later from all that, here we are! I’m so so excited to see where God is going to take KJ & Company and can’t wait to share this journey with you guys!

  6. Siete Taco Seasoning – since John has been doing Paleo, we’ve been searching for cleaner ingredients! The taco seasoning was so so good!

Next Month

We’ve got Valentine’s Day upon us! February will also officially be my first full month full-time with KJ & Company, so I’m so excited for it! I’ve got lots of yummy recipes up my sleeves that I can’t wait to share with you all.
