Cream Cheese Chicken Enchiladas

Cream Cheese Chicken Enchiladas are a fun, delicious dinner option! Tortillas are rolled up with soft cream cheese, shredded chicken and cheese. Topped with a classic enchilada sauce and baked until bubbly, these enchiladas are creamy and dreamy! All you need are a few simple ingredients to have dinner ready to go.

Here in Nebraska, we have a local Mexican restaurant that slays the cream cheese chicken enchilada game! They’re seriously so good! Using that as inspiration, and, let’s be honest, craving, I set out to make those memorable enchiladas at home! The result: a bubbly pan of cream cheese chicken enchiladas.

Ingredients Needed

To me, the more simple the ingredient list, the better. And that’s exactly what I did for this recipe!

When it comes to the chicken, you can snag a rotisserie chicken from the store and shred it, or bake up a couple chicken breasts and then shred them. Either works perfectly!

  • Tortillas
  • Cream cheese
  • Monterey jack cheese
  • Chicken
  • Enchilada sauce
  • Your appetite!

Dinner on the table with only 5 ingredients? Count me in!

Have Fun with this Recipe

Rolling up enchiladas is as fun as you make it! It’s actually very soothing work for me – probably because it’s an assembly-line type recipe! Tortilla, cream cheese, shredded cheese, chicken, roll, repeat!

Turn on some tunes, your favorite show or talk with your fam and these beauties will be stuffed, rolled and ready for the oven before you know it!

Pulling a bubbling pan of these enchiladas out of your oven is more than enough to make your stomach rumble. Dig on in, save them for later or share with a friend!

  • 4 cups shredded chicken (roughly 2 cooked chicken breasts worth)
  • 8 oz cream cheese, softened
  • 8 oz Monterey Jack cheese, shredded
  • 6 flour tortillas
  • 19 oz enchilada sauce

  1. Preheat your oven to 400 degrees. Working with one tortilla at a time, spread some of the cream cheese down in the middle, top with some of the chicken and sprinkle in a little bit of the shredded cheese. Roll it up and place it into a 9×13 pan.
  2. Repeat this process until all the tortillas, cream cheese and chicken have been used. Make sure to save a little bit of the shredded cheese for topping.
  3. Evenly pour the enchilada sauce over the rolled tortillas. Top with the leftover shredded cheese and bake for 20-25 minutes, or until the cheese is melted and the enchiladas are bubbly. Enjoy!

  • Rotisserie chicken or home-cooked chicken both work great for this recipe!
  • Looking for a “take-and-bake” option? Make the enchiladas as instructed and then bake upon arrival!
