If you’re looking for pure comfort food, Chicken Tater Tot Casserole is just the dish for you! A classic, homemade, creamy chicken pot pie-type filling is topped with nostalgic tater tots. When it comes out of the oven, the tater tots are golden brown and crispy, while the creamy, chicken filling is bubbling to perfection.

This is one of those recipes that, even though it isn’t the healthiest on the list, it is certainly one that you will turn back to! That’s the thing about comfort food, though. Recipes that might not be the healthiest for us in calorie count, but good for the soul. With cold temperatures and snow flurries, you will want a bowl of this Chicken Tater Tot Casserole in front of you! Heck, any time of the year you will want this bowl in front of you!

Tips for Making in Advance

Not only are the tater tots a great part of this dish, but so is it’s versatility! You can easily make this dish in advance, re-heat leftovers, make a freezer meal out of it or transport it to family and friends. Here are some simple steps to help you make this dish in advance:

Freezer meal:

  1. Make the recipe as directed up to the point of pouring the chicken base into the baking pan.
  2. Cool before pouring into a freezer-safe pan, top with the tater tots, cover and freeze.
  3. To bake, pull it straight from the freezer, remove the cover and bake as instructed, adding an additional 30 minutes to compensate for the frozen meal.

Leftovers:

  1. Make the recipe as directed. Cool and store leftovers in an air-tight container in the refrigerator.
  2. Re-heat via microwave or covered in the oven at 400 degrees for about 20 minutes.

Take and Bake:

  1. Make the recipe as directed, but after topping with the tater tots, don’t bake it.
  2. Cover with aluminum foil and place and a transport-safe compartment.
  3. Take with you to wherever you need to go/deliver and bake upon arrival as the baking directions below say.

PS: these aluminum foil baking pans work great for all of these options! Then you don’t have to worry about cleaning a pan/getting one back.

All Things Tater Tot

Tater tots always have a nostalgic memory attached to them. As you crunch into one, it usually takes you straight back to your childhood or the first time you tasted one of those salty, crispy, golden nuggets of joy. I think my husband about cried tears of joy when he saw me bringing home a couple bags of tater tots to toss in the freezer. You never know when you are going to need a tot! Plus, if something is topped with tater tots, doesn’t that just automatically make them better?

Make this casserole for a weeknight meal, get-together, social gathering, for a neighbor or a friend – any way you bake it, it’s bound to bring love and smiles!

Description

Ingredients

  • 1 medium onion, chopped
  • 2 celery stalks, chopped into 1/4 inch rounds
  • 2 large carrots, cut into 1/4 inch rounds
  • 4 tablespoons butter
  • 1 tablespoon garlic
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 tablespoons flour
  • 2 cups heavy cream
  • 1 cup chicken stock
  • 2 pounds boneless, skinless chicken tenderloins, cut into 1 inch pieces
  • 32 oz bag frozen tater tots

Instructions

  1. Preheat your oven to 350 degrees. In a large skillet over medium heat, sauté the onion, celery and carrots with the butter until slightly translucent, about 5-8 minutes, being careful to avoid any browning. Add in the garlic, salt, pepper, rosemary, oregano and thyme and stir to combine.
  2. Add in the flour and combine until a paste-like consistency forms, about a minute. Gently stir in the heavy cream and chicken stock and bring to a simmer. Add in the chicken and allow the mixture to simmer on low heat for 15-20 minutes, or until it has thickened slightly and the chicken is partially cooked.
  3. Carefully pour the chicken filling into a 9×13 pan. Evenly top the chicken mixture with the tater tots. Bake for 1 hour, or until the top is golden brown and the sauce underneath is bubbling. Enjoy!

Notes

  • If you are looking for freezer meals or to prepare this ahead of time, this chicken tater tot casserole can be made all they way up to the point before you bake it. Allow it to cool slightly before you cover it and refrigerate or freeze it. If you freeze it, you will need to add about 45 extra minutes to the cook time.

    This casserole is the bomb! I just made it tonight and it was soo so good. Also, if you know me you know I’m not that great of a chef, but it was super easy to make! My friend and I had a great time whipping it up and then enjoyed it together-bringing a little taste of Kate’s yummy cooking to Florida. Also disregard the two start vote, that was me making a silly mistake, this dish (and honestly everything Kate makes) deserves 100 stars if I could give it!
