BBQ Chicken Lettuce Wraps

What Type of Lettuce to Use

First off, let’s talk lettuce! Since it is a vitally important part of these lettuce wraps haha. The best kind of lettuce to use is butter lettuce! It is tender as butter (hence the name), has a slightly sweet, neutral flavor and is perfect for wrapping!

Each butter lettuce cup is the perfect size for a hand-held wrap!

I was able to find a 3 pack of butter lettuce (for only like $6!) at my local Costco, but have also seen it available at Target and my local grocery store.

How to Make BBQ Chicken Lettuce Wraps

When it comes to making these chicken lettuce wraps, it couldn’t get easier! That’s what this recipe is all about: ease, flavor and fun.

First, sauté the chicken with a little olive oil and seasoned salt. Add in your favorite bbq sauce and let it caramelize.

Then, make the fresh corn salsa! All you need is a couple ears of corn, cherry tomatoes, cilantro and salt and pepper. It comes together in a flash!

Finally, assemble! Make it fun and a “serve yourself” option so that everyone can build their own lettuce wraps. Spoon in a little bbq chicken to each lettuce cup and top with a little bit of fresh corn salsa. 

Dig in!

The vibrant flavor of the fresh corn salsa is the perfect companion to the rich, bbq chicken. It’s a burst of flavor in every bite! If you’ve never tried fresh corn before in a salsa, it’s so good! The sweet, crunchy corn really sets it apart.

I love how perfect these bbq chicken lettuce wraps are for a quick dinner option after a long, hot summer day. Plus, it really accents the fresh flavors of summer!

Ingredients

  • 1 1/2 pounds boneless, skin-less chicken breast or tenders – cut into 1/2 inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon seasoned salt
  • 1 cup bbq sauce
  • 2 ears fresh corn
  • 10 oz roma or cherry tomatoes, halved
  • 3 tablespoons chopped cilantro
  • 1 bulb butter lettuce

Instructions

  1. Heat the olive oil in a medium-sized sauté pan over medium heat. Add the chicken in and season with the seasoned salt. Sauté the chicken for about 5 minutes on both sides until perfectly seared and cooked through. Add in the bbq sauce and toss to coat. Reduce the heat to low for a couple minutes then turn off the heat.
  2. While the chicken cooks, prepare the corn salsa. Cut the kernels off the fresh corn cobs and add to a bowl with the halved tomatoes and chopped cilantro. Toss to combine and season to taste with salt and pepper.
  3. Gently pull the butter lettuce leaves apart from the bulb. Serve and assemble by using the lettuce as a wrap like a tortilla and add in a spoonful of bbq chicken and top with the fresh corn salsa.

Notes

  • If you don’t have time to make the bbq chicken from scratch, you can use a rotisserie chicken that has been lightly shredded! Toss to coat with the bbq sauce and warm through.
  • Use your favorite kind of bbq sauce – my personal favorite is Sweet Baby Rays!
  • The fresh corn salsa can be made a day in advance.
  • Store the leftovers separate from each other.
