Description
Pineapple Chipotle Jerk Chicken is like a party on a plate! Chicken breasts are coated in a homemade chipotle jerk seasoning blend, seared until golden brown and then simmered in a decadent sauce of pineapple and light beer. The perfect combination of Jamaican and Mexican cuisines! Boring chicken dinners are no more when this Pineapple Chipotle Jerk Chicken is around!
Ingredients
For the chipotle jerk seasoning:
- 1 tablespoon seasoned salt
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 2 teaspoons brown sugar
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 teaspoon allspice
- 1/2 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon cinnamon
For the chicken:
- 4 chicken breasts, boneless and skinless
- 2 tablespoons extra virgin olive oil
- 1 1/2 cup cubed pineapple, either fresh or canned that has been drained
- 12 oz light beer
Instructions
- Combine all of the ingredients for the chipotle jerk seasoning together in a small bowl. Evenly coat the chicken breasts with all of the seasoning.
- Heat the olive oil in a large skillet over medium heat. Sear the chicken breasts for a few minutes on each side, or until each side is golden brown. Don’t worry about cooking all the way through at this point. Set the chicken aside on a plate for later use.
- Add the pineapple pieces into the skillet and lightly sauté. Deglaze the pan with the beer and bring the sauce to a simmer. Nestle the chicken back into the sauce, cover with a lid and reduce the heat to low. Let simmer, covered, on low for about 20 minutes.
- Remove the lid and allow to simmer uncovered for about 5-10 minutes, or until the sauce has reduced slightly. Serve the chicken with the sauce spooned over the top. If you are not a fan of cooked pineapple, discard the pineapple pieces before serving. Can also be served with additional fresh pineapple. Enjoy!
Notes
- This recipe can be used for any cut of chicken! Chicken breasts, tenders or thighs work great.
- If you are concerned about using beer, try to find a non-alcoholic light beer or use chicken stock in place of the beer.
- Discard the pineapple pieces before serving if you are not a fan of cooked pineapple.
