How to make Pineapple Chipotle Jerk Chicken:

Making this chicken dish is just as simple as it is delicious. You’re just a few steps away from a fun, flavor-packed meal!

Here’s what you need to do:

  • Mix together your own chipotle jerk seasoning blend. If you don’t want to make your own, mix together 2 tablespoons cajun seasonin with 1 tablespoon chipotle powder.
  • Coat the chicken with the seasoning and sear until golden brown on both sides. Set the chicken aside. 
  • Add the pineapple into the skillet, deglaze with light beer and then add the chicken back in. 
  • Simmer until the chicken is cooked through and oh-so delicious!

Different ways to serve Pineapple Chipotle Jerk Chicken:

Since both Jamaican and Mexican cuisines are combined in this fun chicken dinner, there’s several ways that you can serve this! 

  • Keep it tropical: serve it with fresh/grilled pineapple (or a pineapple or mango salsa) and rice! I highly recommend my Coconut Cilantro Rice
  • Make a burrito bowl: use the Coconut Cilantro Rice as a base, top with the chicken, avocado/guac, salsa of choice, cheese, beans if desired or lettuce!
  • Tacos or burritos: go off of the same options as above but add in some taco shells! You can never go wrong with a good taco!
  • Quesadilla: toss the leftovers into a quesadilla the next day – you won’t be disappointed!

Pineapple Chipotle Jerk Chicken quickly became one of our new favorites – there’s just so much flavor in every bite! We loved eating this as leftovers too. Serve it up with a fun cocktail (Strawberry Smash Peach Margaritas, anyone?) to have a little party in your own kitchen (perfect Cinco de Mayo option!), or add it to your weekly rotation for a fun family meal!

Ingredients

For the chipotle jerk seasoning:

  • 1 tablespoon seasoned salt
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 2 teaspoons brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon allspice
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/4 teaspoon cinnamon

For the chicken:

  • 4 chicken breasts, boneless and skinless
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 cup cubed pineapple, either fresh or canned that has been drained
  • 12 oz light beer

Instructions

  1. Combine all of the ingredients for the chipotle jerk seasoning together in a small bowl. Evenly coat the chicken breasts with all of the seasoning.
  2. Heat the olive oil in a large skillet over medium heat. Sear the chicken breasts for a few minutes on each side, or until each side is golden brown. Don’t worry about cooking all the way through at this point. Set the chicken aside on a plate for later use.
  3. Add the pineapple pieces into the skillet and lightly sauté. Deglaze the pan with the beer and bring the sauce to a simmer. Nestle the chicken back into the sauce, cover with a lid and reduce the heat to low. Let simmer, covered, on low for about 20 minutes.
  4. Remove the lid and allow to simmer uncovered for about 5-10 minutes, or until the sauce has reduced slightly. Serve the chicken with the sauce spooned over the top. If you are not a fan of cooked pineapple, discard the pineapple pieces before serving. Can also be served with additional fresh pineapple. Enjoy!

Notes

  • This recipe can be used for any cut of chicken! Chicken breasts, tenders or thighs work great.
  • If you are concerned about using beer, try to find a non-alcoholic light beer or use chicken stock in place of the beer.
  • Discard the pineapple pieces before serving if you are not a fan of cooked pineapple.
