Raspberry Walnut Salad

How to make the raspberry vinaigrette:

Making your own salad dressing at home is SO worth it! Not only can you control the ingredients that go into it, but it ends up having so much more flavor. You want to know what sets this raspberry vinaigrette apart? Raspberry preserves! After having a similar salad at a friend’s house, I couldn’t stop thinking abou the idea of adding preserves to a dressing – brilliant! 

Simply whisk together the raspberry preserves, finely chopped shallot, lemon juice, salt and extra virgin olive oil unti smooth. Or, you can add all the ingredients to a mason jar with a fitted lid and shake it until a dressing forms. Easy peasy!

Assembling the salad:

Putting this salad together couldn’t get any easier – which is my kind of salad! It’s hassle free and comes together in a snap. 

After you make the raspberry vinaigrette, toss it together with the fresh greens, then top with the raspberries, walnuts and feta cheese. I prefer to have my toppings on top, but you could definitely toss them all together as well! 

Tips for making this salad in advance:

Since this salad assembly is a breeze, it can easily be made in advance! Here are my tips for making it advance or using it as a meal prep option:

  1. Make the dressing ahead of time and store in the refrigerator.
  2. Store the greens with the toppings on top so all you have to do is add the dressing.
  3. Wait to dress the salad until right before serving so that the greens don’t get soggy.

Serving this Raspberry Walnut Salad is the perfect option to put a little bright cheer on the table! It works great for holidays, family gatherings, date nights or just to have for lunch – I love how versatile it is!

Ingredients

Scale

For the salad:

  • 56 ounces Spring lettuce mix
  • 12 oz fresh raspberries
  • 1/3 cup chopped walnuts
  • 1/3 cup feta cheese, crumbled

For the dressing:

  • 1 1/2 tablespoons raspberry preserves
  • 1 tablespoon finely chopped shallot
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 cup extra virgin olive oil

Instructions

For the salad:

  1. Put the greens in a large bowl and top with the fresh raspberries, walnuts and feta cheese.

For the dressing:

  1. In a small bowl, combine the raspberry preserves, shallot, lemon juice, salt and olive oil. Whisk together until smooth and combined.
  2. Pour the dressing over the salad and gently toss to coat. Enjoy!

Notes

  • To make this salad in advance, make the dressing and store it separately from the salad. Dress the salad with the dressing when ready to serve.
