Sunday Pot Roast is the meal that you can smell without even making it. A chuck roast is cooked low and slow with onions, carrots, fresh rosemary and chopped garlic. Serve it on a bed of freshly mashed potatoes and you have one cozy meal! This is a slow-cooker dinner that you will want to have in your recipe box! And, of course, Sunday Pot Roast can be made any day of the week and for any dinner occasion!

One of the things that I love the most about this Sunday Pot Roast is the way that it makes your home smell. There is a coziness about it that just can’t be explained! Plus, what’s better than a dinner meal that doesn’t take much work and can feed a crowd? Not much! 

If you ask me, Sunday Pot Roast is best served with these Asiago Herb Mashed Potatoes. It’s a combination that you just can’t go wrong with. After you place the fall-apart pot roast on top of the mashed potatoes along with some carrots and onions, make sure you drizzle it all with some of the au jus from the slow cooker. Pure heavenly comfort in each bite!

Slow cooker meals are fantastic for many reasons. First, you don’t have to worry about them. Just throw in all the ingredients and let it do it’s thing. Second, you can usually feed a crowd or have a decent amount of leftovers with a slow cooker meal. And lastly, you usually only have a couple dishes to wash. Now, that’s my kind of meal! 

Whether you are making this Sunday Pot Roast for a weeknight meal, Sunday dinner, family gathering or even a holiday, you won’t have a hungry stomach around. Enjoy!

Ingredients

  • 3 1/2 pound chuck roast
  • 1 large onion, cut into large pieces
  • 3 large carrots, peeled and cut into 2 inch pieces
  • 3 sprigs fresh rosemary
  • 1 tablespoon seasoned salt
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chopped garlic
  • 1/2 cup beef stock

Instructions

  1. Place the roast into a large enough slow cooker. Nestle the onions, carrots and rosemary all around it. Sprinkle it with the seasoned salt and add in the Worcestershire sauce, chopped garlic and beef stock.
  2. Cook on high for 6 hours. Serve with mashed potatoes if desired. Enjoy!

Notes

  • I love to use the au jus from the meat as a “gravy” when serving!
  • If you have the time for it, you could also cook this on low for 8-10 hours.
