Honey Dill Roasted Carrots

Honey Dill Roasted Carrots are a simple yet delicious side dish for any meal. Carrots are glazed with naturally sweet honey and fresh dill and roasted to perfection. 

I love that this side dish only requires a few simple ingredients to produce a delicious outcome. Carrots can easily be looked over to be the main feature of a dish, but not in this case! You can use either baby carrots or carrots peeled and cut into pieces. Toss in a little honey, olive oil, fresh dill and salt and pepper. Pop them in the oven, let them do their thing and pull them out before dinner is to be served and you are all set to go!

These Honey Dill Roasted Carrots might not look like much, but they will disappear before you know it!

Description

Honey Dill Roasted Carrots are a simple yet delicious side dish for any meal. Carrots are glazed with naturally sweet honey and fresh dill and roasted to perfection.


Scale

Ingredients

  • 2 pounds baby carrots
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup honey
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat your oven to 350 degrees. Place the carrots in a 9×13 baking pan. Add in the olive oil, honey, dill, salt and pepper and toss to coat. Cover with foil and bake for 45 minutes.
  2. Uncover the carrots and preheat your broiler to high. Broil the carrots for about 5 minutes or until they get a little browned and caramelized. Enjoy!

Notes

  • You can use baby carrots or regular carrots that have been peeled and cut into pieces.
