First off, recipes like this salad are what we all need in life. It only requires a handful of ingredients, minimal prep time and creates a delicious outcome! The fact that is healthy and good for you is an added bonus. These features are what make it a perfect side dish for a holiday meal, family gathering, or your weeknight dinner table. Easily make it a complete meal by adding a protein – grilled or roasted chicken would be delicious!

Secondly, this salad gets better with time! That means it can be made in advanced and whipped out when you need it. How great is that? Allowing the salad to sit a little bit before serving allows the dressing to work on the kale a bit. It perfectly marniates the kale so that its not tough and rigid. Insider tip on kale: make sure that you remove the tough ribbing and stalks from the kale as the recipe calls for. That way you won’t have to do a bunch of unnecessary crunching!

Lastly, this is a kale salad that I actually got my husband to eat and love!! That’s a BIG deal! Which also vouches that this is a GOOD salad. Making a homemade dressing plays a big part in making this salad a homerun. Tossing it all together makes it pretty darn hard to beat.

Scale

Ingredients

For the salad:

  • 10 oz chopped kale, tough stalks and ribs removed
  • 6 oz dried cranberries
  • 1/2 cup pumpkin seeds
  • 1/2 cup crumbled goat cheese
  • 1 large honeycrisp apple (or 2 smaller ones), chopped into 1/2 inch pieces

For the dressing:

  • 1 tablespoon finely diced shallot
  • 1/4 cup dijon mustard
  • 1/4 cup honey
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt

Instructions

For the salad:

  1. Combine all the ingredients in a large bowl.

For the dressing:

  1. In a small bowl, whisk together the shallot, dijon mustard, honey, olive oil, lemon juice and salt until smooth and combined.
  2. Pour the dressing over the prepared salad and toss to coat evenly. Serve immediately or make a day in advance and store in the refrigerator until service. Enjoy!

  • This salad is very versatile – it can be made and served right away or made a day in advance, refrigerated and served when needed. This feature makes it great for large parties, holidays, or meal prep!
