These Better than Take-Out Shrimp & Noodles not only make the perfect weeknight/weekend meal, but they are also made in just 2 pans! That’s right, minimal dishes for you to have to clean afterwards. The rice noodles cook quickly in a pot of boiling water, while the shrimp and veggies sauté in a homemade sauce. Toss everything together in one pan and serve it up family-style, or go the extra mile and use your own take-out boxes and chop sticks. How fun would that be?! Better Than Take-Out Shrimp & Noodles

Description

You can have quick, easy and delicious take-out food right at home without having to place an order or feel like you need a 12 hour nap after eating it.

Ingredients

 

  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons chopped garlic
  • 8 oz snap peas
  • 1 cup shredded carrot
  • 1/2  cup diced red bell pepper
  • 1 pound shrimp, peeled and de-veined
  • 1/3 cup soy sauce
  • 2 tablespoons brown rice miso paste
  • 1/4 hoisin
  • 8 oz rice noodles, cooked according to package instructions

Instructions

  1. In a large saute pan, heat the olive oil over medium heat. Add in the garlic, snap peas, carrot and red bell peppers and saute for 3-5 minutes. Add in the shrimp and saute for another 3-5 minutes, or until the shrimp are just starting to turn pink.
  2. In a small bowl, whisk together the soy sauce, miso paste and hoisin. Pour the sauce into the saute pan and toss to coat completely. Bring the sauce to a simmer and let simmer for a couple minutes to thicken slightly.
  3. Add in the cooked rice noodles and toss to coat. Enjoy!

Notes

  • This dish is very versatile – chicken, shrimp or sliced steak would all work great! You will need to add additional cooking time if using chicken or steak
  • You can also add other veggies if desired -broccoli would be delicious!
