Ham and Cheddar Quiche Cups are the perfect, little breakfast to start your morning off right! They are packed full of cheddar cheese and salty ham to make each bite delicious.

Yield:12 quiche cups
1/2 cup cottage cheese
1/4 cup heavy cream
1 cup shredded cheddar cheese, plus 1/3 cup extra for garnish
1 1/2 cups cubed ham
Preheat your oven to 400 degrees. In a medium bowl, whisk together all of the eggs until combined. Add in the cottage cheese, heavy cream, 1 cup of cheddar cheese and ham and whisk to combine.
Spray a standard muffin tin with non-stick cooking spray. Fill each muffin tin 3/4 of the way full with the egg mixture. Evenly top each one with the extra 1/3 cup of shredded cheddar cheese. Bake for 20-25 minutes, or until the tops are golden brown.
